Eating Seasonally gives us an opportunity to connect with the beautiful changes in nature as the seasons change. It allows us to enjoy fruits and vegetables of all colors on the rainbow while optimizing our nutrient intake of these foods. Did you know, vegetables maintain a higher nutrient levels when they are prepared and consumed closer to their time of harvest?! Vitamins including vitamins C and B can be lost during storage.

Eating seasonally is better for our health…and our wallet! The relative abundance of the crop usually makes it less expensive and tastier. When food is not in season locally, it’s either grown in a hothouse or shipped in from other parts of the world, and both affect the taste. Early harvest of transporting crops required them to be refrigerated so they don’t rot during transportation. This affects the way they ripen, this environment doesn’t allow produce to ripen into full flavor the way the sun and its natural environment would allow them to.
